This year, ESSENSOR will again be present at the MIE and will present a lecture in close collaboration with Meatable.
Meatable is a remarkable Dutch biotech company developing cultured meat products in its laboratory. One of the challenges is to meet the sensory expectations associated with authentic meat.
In the lecture, which takes place on 20 September, Alard Verhoef of ESSENSOR and Rui-Paulo CUNHA of Meatable will present their approach on how they think they can achieve an excellent-tasting piece of meat in the future.
ESSENSOR’s role in sensory analysis is essential to help Meatable identify and quantify the differences between cultured meat and traditional meat. Meatable’s ultimate goal is to match and even improve on traditional meat!
